Some culinary combinations just work wonders when the ingredients come together and here is one such example. I have tried to make a Thoran(a stir fry with vegetables and coconut) using mushrooms many times but it has never before turned out this good. I highly recommend that you try this out because the flavors combo seems amazing – the earthiness from the mushrooms with the oniony scallions and rich coconut, something that I would define as “simple pleasures of life”!
I usually get my Mushrooms from Costco and it is always on my grocery list. Generally I pick up the baby Bella mushrooms but for no special reason, on the day I came up with this recipe, I picked the white button mushrooms. Came home and thought of making a Thoran(a stir fry with coconut) but I was out of onions or shallots so I had to rely on the scallions, hoping that it would impart some onion-like flavor. The results were a treat to the palate, and the whole family loved it. I hope you do too :)
Ingredients
24oz (680gms)-White button Mushroom
1 packet 5.5oz(156gm)- Spring Onion / Scallions
1/2 Tsp - Mustard Seeds
1/2 Cup - Coconut (desiccated or fresh)
4 - Green Chilly
3/4 Tsp - Jeera (Cumin) powder
1/4 Tsp - Turmeric powder
1 sprig - Curry leaves
1/2 Tsp - Fresh Ginger, grated
1 clove - Garlic, minced
1 Tablespoon - Oil (preferably coconut oil)
Salt to taste

Directions
- In a large bowl, mix the chopped mushrooms, spring onions, coconut, green chilly, turmeric and jeera powder and mix well
- Heat oil in a sauté pan and add mustard seeds; let them splutter
- Add curry leaves and sauté for a few seconds.
- Mix in the mushroom mixture and cook uncovered occasionally mixing it.
- Serve hot.
Notes and Tips
- I generally avoid cutting mushrooms into very small pieces as the mushrooms might end up loosing a lot of water.
- You can use any variety of mushroom you have (Bella, white button...)
- You can add a cup of cooked lentils to this. It is delicious that way too.
I like mushroom thoran, I usually make it with mixed vegetables. The combination of mushroom with spring onion sounds interesting.
ReplyDeletei love mushrooms.. i prefer the bella mushrooms over - white. i never knew my love for them until coming here and the wide line of mushrooms. this is a sure try. i might skip the coconut and have this stir fry by itself.. i have to get mushrooms tomorrow itself. This sure is an add on for my diet too
