Lemon Blueberry Oatmeal Bread


Lemon and blueberry is one of my favorite combinations and I am really glad my husband and daughter also enjoy this equally well. This almost guarantees that whenever I bake something using this delectable combination, it is quite satisfying to know that my family is going to enjoy it. Any recipe with this combo, be it a bread, muffin, pie, scones, crepe, cake- definitely catches my attention. Another recipe that is an all-time favorite in our family, is the Blueberry Muffins with Lemon Sugar Topping. Do try it out as its truly YUM!


Recently, while gawking through Pinterest and noshing over the gorgeous food, I saw this Blueberry bread recipe that looked really delicious and hearty. I modified the recipe a bit to incorporate the ingredients that I always have in my pantry but nevertheless the results were amazing. We made about 3 loaves last week and its all almost gone already. I know we definitely seem to consume a lot but at the same time I am happy to be able to feed my lovely family something nice for breakfast during the busy weekdays :) 




The bread is really moist with oodles of succulent blueberries in it and the texture is sort of a hybrid between that of a cake and a bread. I hope you enjoy it as much as we did!

Yields - 1 loaf
Ingredients
1 Cup - Old fashioned oats
1/2 Cup - Oats {blend in food processor to make flour}
1 Cup - All purpose flour
1 1/2 Tsp - Baking powder
1/2 Tsp - Baking soda
1/4 Tsp - Salt
1 1/2 Cup - Plain yogurt
1/4 Cup - Oil
2 - Eggs
3/4 Cup - Sugar
1 Cup - Blueberries
1 1/2 Tsp - Lemon Zest
3 Tsp - Flax seed Powder (optional)
1 Tablespoon - Oats for topping (optional)

Directions

  • Preheat oven to 350 degrees. 
  • Line the baking pan with parchment paper or spray with oil
  • In a bowl, mix together the oats, oat flour, all purpose flour, baking powder, baking soda, sugar and salt.
  • Add about 2 tablespoons of this mixture to the blueberries. This is to ensure that the berries don't sink to the bottom of the bread
  • In the stand mixer bowl, add yogurt, oil and eggs. 
  • Add the dry ingredients to the wet mixture in 3 batches and mix until everything is well incorporated. 
  • Gently fold in the blueberries and lemon zest
  • Pour batter into the prepared bread pan and sprinkle about 1 tablespoon of oats on top
  • Bake for 55-60 minutes or until the inserted toothpick comes out clean.
  • Let cool for 15 minutes then take the bread out of pan; allow it to cool on a cooling rack. 
Notes and Tips
  • Mix the blueberries with flour before adding it to the batter.This is to ensure that the berries don't sink to the bottom of the bread
  • Don't skip the lemon zest - Its highly recommended
  • Since this bread contains fresh blueberries I recommend refrigeration. Just heat the slice for about 8-9 seconds in the microwave before enjoy it
